Reasons You'll Love These Recipes

  • they are cozy and nourishing comfort food!
  • you can assemble ahead as a freezer crockpot meal OR make a large batch for meal prep
  • many of them are 'dump and go' slow cooker meals (no sautéing!)

Slow Cooker Tips For Flavorful Soup

Cooking low and slow can strip some of the flavors from these crockpot soup recipes. Here are some tips to get the BEST flavor & texture from your crockpot soup recipe!

  • use the right herbs- a general rule is to add hardy herbs like rosemary and thyme at the start of cooking. Reserve soft herbs like cilantro and parsley to add just before serving
  • add acid at the end - most soups can benefit from a boost of acid (lemon juice, lime juice, balsamic vinegar etc) at the end of cooking. It really brings out extra flavor!
  • taste for salt- always taste test before serving and stir in more salt if needed
  • use the right cut of chicken- chicken breast cannot handle over 5 hours (on low!) in the slow cooker. If you need to cook for longer than that, consider boneless skinless chicken thighs. Bonus: brown the thighs first and they will hold together even better!
  • coconut milk- in our experience, light coconut milk curdles in the crockpot, whereas full-fat coconut milk can withstand cooking up to 8 hours on low.

FAQ

Can I make these crockpot soup recipes in the Instant Pot?

Many of these slow cooker soup, stew, and chili recipes can be made in the Instant Pot - see individual recipes for details (we've included instructions if possible.

Can I cook soup on high heat in the crockpot?

When using the slow cooker, it's best to use the low setting whenever possible. The reason for this is that some slow cookers cook quite hot, and on high, they can vigorously boil and overcook the ingredients.

Is soup better in a crockpot / slow cooker?

With our tips (see above) for making flavorful soup in the crockpot, yes! It's just as good as soup on the stovetop, but maybe even better because you don't have to babysit a pot on the stove. Not to mention, you can start it early in the day and dinner will be ready and waiting for you when 5:00 rolls around!

Soup Meal Prep Tips

  1. freezer crockpot meals - some soups can be assembled ahead and frozen as freezer crockpot meals.
    • look for soups with no sautéing
    • avoid cruciferous veggies like broccoli and cauliflower which must be blanched before freezing
    • avoid potatoes or use baby potatoes and leave them whole
  2. cook first, then freeze- the majority of soups are freezer friendly! The only soups I've found to not freeze/thaw well are ones with delicate pasta shapes (like orzo).

FAQs

How long can you leave soup on warm in a crockpot? ›

Don't leave it on 'warm' all day

Most appliances will automatically shut off after 20 or so hours on this setting, but you shouldn't leave food in a slow cooker for an extended length of time. The general rule of thumb is that 2-4 hours is the maximum length of time you can leave food in a slow cooker on warm.

Is it safe to leave a crockpot on low overnight? ›

Is it safe to leave a slow cooker on for 12 hours? Yes, you can use your slow cooker for longer than eight hours, as long as you keep an eye on it. Many slow cookers do have an automatic shutoff after 24 hours.

Can you preheat an empty crockpot? ›

Most slow cooker crocks, especially the ceramic ones, take a little bit of time to heat up so you'll want to preheat before you begin. You don't need to let it heat up empty for long—even just 10 minutes of preheating will help dishes cook more evenly.

Is it safe to cook chicken in a slow cooker? ›

Yes, if you use them correctly. The slow cooker cooks foods slowly at a low temperature, generally between 170 and 280 degrees F, over several hours. The combination of direct heat from the pot, lengthy cooking and steam, destroys bacteria making the slow cooker a safe process for cooking foods.

Is 4 hours on high the same as 8 hours on low? ›

A general rule of thumb from Luis Sanchez, senior category manager for the appliance manufacturer Breville: To go from "High" to "Low" (or vice versa), multiply (or divide) the original time by 1.5 to 2.5 hours. And as with the cooking times for specific ingredients, these times are approximate.

Can I leave my crockpot on warm for 8 hours? ›

The 'Warm' setting is ONLY for keeping already-cooked food at the perfect serving temperature until mealtime. To prevent food from dipping into temperatures that aren't food-safe, you shouldn't use the 'Warm' setting for more than 4 hours.

Can I leave chili in a slow cooker overnight? ›

Can I leave crockpot on low overnight? Yes! This is my preference. I like to assemble the chili the night before, put it in the crockpot, then turn it on just before I go to bed.

Can you overcook in a slow cooker? ›

However, if you consistently find your slow cooker meals with meat coming out tough, lackluster, and flavorless, then you may need to reassess how you're prepping your dishes, and you may need to turn down the temperature. If you cook meat at too high of a temperature in your slow cooker, you're likely to overcook it.

Should you stir while slow cooking? ›

Resist the urge. Every time you lift the lid, heat escapes and adds up to 30 minutes longer to your cook time. Slow cookers are made so you don't have to stir with the low cooking temperature, so relax. Leave it.

Why can't you reheat food in a slow cooker? ›

Because slow cookers work slowly (it's right there in the name, after all), food is likely to remain between 40 and 140 F for an extended period. The longer food remains in this Danger Zone of temperatures, the greater the risk of foodborne illness.

What happens if you don't brown meat before a slow cooker? ›

"Browning, or caramelizing, meat before putting it into a slow cooker isn't 100 percent necessary, but it is well worth the effort for the most flavorful and full-bodied end result," he says. "The caramelized surface of the meat will lend rich flavor and color to the finished dish."

Why is my chicken still pink in the Crockpot? ›

The USDA further explains that even fully cooked poultry can sometimes show a pinkish tinge in the meat and juices. This is particularly true of young chickens whose bones and skin are still very permeable. Pigment in the bone marrow can color the surrounding tissue and make the bones themselves look very dark.

What vegetables are good in a slow cooker? ›

The best vegetables for a slow cooker are sturdier veggies like celery, carrots, tomatoes, onions, peppers and green beans, like we used in this recipe. Also, cauliflower, corn, beets, potatoes (both Russet and sweet), mushrooms and squash are all great contenders, too.

How long can I keep soup warm? ›

Food should not be at room temperature for more than two hours. Shallow containers or small amounts of hot food can be placed directly in the refrigerator or rapidly chilled in an ice or cold water bath before refrigerating.

How long is too long for slow cooker soup? ›

Recipes with meat like chili and pork shoulder are best when cooked for six hours minimum or up to ten hours. Vegetarian recipes are best cooked for around four hours, but can do a minimum of two hours or maximum of six hours (after which the vegetables start to get unpleasantly mushy).

How do you keep soup warm for 4 hours? ›

Purchase a wide-mouthed, insulated (double-walled) stainless steel interior thermos. Boil some water and fill the thermos with it. While the boiling water is heating up your thermos, heat your food until hot. Dump the hot water out of the thermos, and immediately put your food in.

How long should you let homemade soup cool before refrigerating? ›

The food danger zone is that place between 40 and 140 °F where pathogens grow most quickly. It can take a long time to get through the danger zone when cooling a large batch of chili, soup or stew. The soup must cool from 140 to 70 °F in 2 hours and from 70 to 40 °F in no more than 4 hours.
