These Cheesy Bacon Mini Egg Muffins are the perfect make-ahead breakfast! Pop them in the freezer and reheat in a few seconds for breakfast on the go.

My son is a serious sleepyhead, and I stillhesitate to wake him up most mornings. Although he’s not a baby any longer, the phrase “never wake a sleeping baby” is permanently lodged in my brain! Lucky for me, he wakes up hungry and loves homemade breakfast like these Mini Egg Muffins!

Over time, I discovered that these Mini Egg Muffins were not only a quick breakfast, they’re also useful for low carb meal prep, and even easy dinners! If my son didn’t like what we were having, I’d pop in a few of these egg bites from the freezer, add fruit and veggies, and dinner would be served.

“So excited these came out terrific! Thank you for the recipe. I followed your recipe using…shredded Parmesan & Swiss, ham, sausage lightly sautéed w/ garlic powder, chopped red pepper & green onion.”

Cynthia

I bake these in the oven with a mini muffin tin. In my opinion, this is the lowest maintenance way to make mini egg muffins without special equipment.

But, if you have a sous vide machine, you can use it to make these muffins into a copycat of Starbucks Sous Vide Egg Bites, with way less money than buying them there!

I love the custardy texture of their Bacon Gruyere Egg Bites, but honestly, I definitely do not like the price! They cost a small fortune. If you decide to make these in the sous vide, you will need a silicone mold for egg bites that seals and a bit more time. Use gruyere cheese and pop them in for about an hour at 145 degrees Fahrenheit, and allow to cool completely before popping them from the mold.

For this easy recipe, you will need:

Substitutions:

  • Substitute chopped deli ham or turkey for bacon. A great option for a healthy breakfast!
  • Add chopped red pepper or any color bell peppers, green onions, diced onion,
  • Substitute egg whites for some or all of the whole eggs. You will need roughly 2.5 cups of egg white or egg beaters solution.
  • Add 1-2 teaspoons of hot sauce for slightly spicy
  • Substitute unsweetened coconut milk for the milk.
  • I like to use cheddar cheese, gruyere cheese and pepperjack cheese. Truly, use the cheese you have on hand!

I love using this oversized mini muffin pan from Amazon. Having a pan with more cavities allows you to get this recipe done super quick!

Store them in the refrigerator in an airtight container or plastic bag for up to three days. These bacon egg bites will keep in the freezer for 2-3 months.

Place the baking sheet with the mini muffin pans inside then bake for 20-25 minutes at 325 degrees. Mini Egg Bite perfection! Let the bites cool in the baking pan for 5 minutes, then pop each one out and place onto a cooling rack to cool slightly. (Seriously, how cute are they?!)

How do you keep egg muffins from sticking to muffin pans? ›

Preheat the oven to 350ºF and grease a non-stick muffin pan (affiliate link). Alternatively, you can use paper liners or silicone liners to prevent sticking.

Why are my egg muffins watery? ›

Veggies should be sautéed so they don't release liquid as the egg cups bake–this is what makes egg muffins watery. Mix the base, making sure not to over-whisk, this can make your egg muffins spongy. Then mix in your meat (if using), cheese, and cooled veggies. Pour + bake.

How do you cook eggs and Bacon in a muffin pan? ›

Using a muffin/cupcake pan, line the holes with a slice of bacon, pressing the bacon around the sides of the hole, not on the bottom. Crack one egg into each hole. Sprinkle with salt and pepper and cheese if desired. Bake at 350 degrees for 20 minutes or until the egg is the doneness you like.

Can I bake muffins at 350 instead of 400? ›

That being said, the standard oven temperature for baking desserts like quick breads and muffins is commonly set to 350 degrees Fahrenheit. Setting your oven to this temperature will almost always produce a well-cooked muffin recipe.

Can you use paper cupcake liners for egg muffins? ›

Of course you can use your muffin tin to bake these but one thing that makes these really easy, from preparation to clean up, are THESE (<affiliate) parchment paper cupcake wrappers that I found. Note: I would NOT recommend making these using regular cupcake wrappers.

Why are my egg muffins rubbery? ›

If your muffins turned out rubbery this means that you left them in the oven for too long. When eggs are overcooked they become dry and rubbery. This is why it's important to use a timer when cooking.

What are the best liners for egg muffins? ›

Silicone muffin liners are best because they release the egg muffins easily, clean up quickly and you don't need to grease them. Avoid paper liners as they are difficult to remove from baked muffins. If silicone liners are not available, generously spray muffin tin with cooking spray.

What does adding an extra egg do to muffins? ›

If there isn't enough egg, your batter or dough may not be able to hold its structure or could end up overly dry or dense. On the other hand, if there is too much egg, your baked goods could lose their shape due to excess liquid, or have a rubbery (or even overly cakey) texture depending on the recipe.

Why did my egg muffins collapse? ›

All-purpose flour and baking powder – The secret ingredients! They help the egg muffins create a light and puffy–yet stable–structure as they bake. Without them, the egg muffins will collapse inside the muffin cups. Feta cheese – For rich, salty, tangy flavor.

Do you cook eggs before bacon or bacon before eggs? ›

You fry bacon on a skillet, then after the bacon is crispy, fry eggs in the bacon grease. Garnish your plate with toast or fruit.

Can you cook raw bacon and eggs in the same pan? ›

Cook over low heat for about 1 minute. As the bacon starts releasing fat, flip and add in eggs. Cover with lid and cook for about 2 minutes. Once the eggs are done to your preferred doneness, sprinkle pepper and serve.

Is it better to bake or pan fry bacon? ›

Cooking bacon in the oven doesn't take any longer than in a pan. Oven bacon gets just as crispy, if not crispier, and there's very little mess to clean up after. Making a batch of bacon in the oven also means you can do other things while it's cooking.

At what temperature to bake muffins? ›

Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin or line cups with paper liners. Stir flour, baking powder, salt, and sugar together in a large bowl; make a well in the center. Beat egg with a fork in a small bowl or 2-cup measuring cup; whisk in milk and oil.

How long to cook tiny eggs? ›

Cover with at least 2.5cm (1") of cold water, add a pinch of salt and place the pan on a high heat. When the water is almost boiling, gently stir the egg, and boil it for between 3 to 8 minutes, depending on the softness or hardness of egg you require.

What is the best oven setting for muffins? ›

Some cupcakes and muffins are cooked at higher temperatures - 190c (375F/Gas Mk 5) or 200c (400F/Gas Mk 6) - this tends to make them slightly more peaked. They can take the higher temperature as they are small and cook through quickly, reducing the risk of the outside burning before the inside is cooked.
