Gingerbread Pancakes Recipe

ingredients

1 ¹⁄₂ cups all-purpose flour
1 teaspoon baking powder
¹⁄₄ teaspoon baking soda
¹⁄₄ teaspoon salt
¹⁄₂ teaspoon ground ginger
1 teaspoon ground cinnamon
1 egg
1 ¹⁄₄ cups milk
¹⁄₄ cup molasses
3 tablespoons vegetable oil

directions

In a small bowl, stir together the flour, baking powder, soda, salt, ginger and cinnamon.
Set aside.
In a large bowl, beat together the egg and milk, then stir in the molasses,and then the oil.
Add the flour mixture until just combined.
Pour a quarter cup of batter for each pancake on a preheated grill.
Cook on the first side until the batter if full of bubbles on the surface.
Flip the pancake and cook til the second side is lightly browned.

Loved these - made as written and they were just perfect. Light and fluffy, with a nice gingerbread flavor. Wonderful Christmas Eve breakfast, think we have a new tradition. Thanks for a great recipe!

Lovely! I subsituted honey for molasses because I live in Italy and they don't sell molasses here, it worked out just fine. I recommend eating them with syrup, it really brings out the gingery flavour!

These are excellent! My only change was to add a generous pinch of ground cloves. I added some chocolate chips to some of the pancakes, and my daughter scarfed down 3 of them. Delicious with or without syrup! We all loved these, even my 15 month old (who usually just tosses his food on the floor). I would use about 1/4 cup less of milk next time to thicken up the batter.

Nice change to regular pancakes, my children enjoyed them. I didn't want the molasses flavour to be too strong, so I lessened by 1 tbsp, I could have even gone a little less than that and used a bit of sugar as another reviewer suggested. I subbed Ener-G egg replacer for eggs and used some vanilla rice milk. Worked out great - it's a really thick batter which cooked up well.

Zaar has been such a super experience for me.Not only do I get to try new recipes...play with my camera taking foodie pics but I get to make new friends along the way! I'm currently unemployed so have lots more time to devote to a couple of my passions...cooking and photography. So long as my health is good...I'm full speed ahead! I love gardening as well and grow my own herbs. I love my city...just ask me!
