As a mushroom lover I find this comforting soup perfect to serve when I want something rich and creamy that’s healthy.

Homemade mushroom soup is an easy dish you can prepare for quick lunches and dinners.

Everyone will love the hearty and satisfying flavors of this healthy mushroom soup.

Ingredients You Need

This healthy mushroom soup recipe is mostly made with simple ingredients.But since the soup is also vegan, it relies on just a couple special ingredients to give it more umami flavor.

Fresh Mushrooms:You can make homemade mushroom soup with white mushrooms or cremini mushrooms, also called baby bella mushrooms. I personally prefer to use the darker cremini mushrooms which have a deeper mushroom flavor than white button mushrooms.Choose whichever you prefer or even consider using a mixture of mushrooms to make your soup.

Mushroom broth:I prefer using mushroom stock or broth instead of vegetable broth when making this creamy mushroom soup. It simply infuses more mushroom flavor into the soup.

Miso:You can use red or white miso, however red miso typically has a stronger flavor than the white.If you are new to cooking with miso, I suggest starting with white, also called shiro miso.

Coconut milk:I use coconut milk to replace the heavy cream often used to make creamy mushroom soup. While it still contains some saturated fats, it’s plant based which also makes this a dairy free mushroom soup and vegan mushroom soup recipe.

Step 1: Cook the onions and garlic in olive oil in a large soup pot over medium-high heat.

Step 2: When the onions start to soften, add mushrooms and fresh thyme and cook for 3 more minutes.

Step 3: Add broth and miso to the pot, cover with lid, reduce heat to low and cook at a low boil for 5 minutes.

Step 4: In a small bowl, whisk together the cornstarch and coconut milk until smooth. Stir it into the soup and cook for five more minutes.As the soup cooks, it will thicken and result in a creamy texture.

Give it a taste and add salt and black pepper as needed.

How to Store Mushroom Soup

Refrigerator: After the soup is cool, store in an airtight container in the refrigerator for up to five days.

Freezer:Store in an airtight freezer container for up to 3 months.

Reheat:To reheat, place the thawed out soup in a pot. When heated, if it seems too thin, simply mix up some cornstarch with a bit of liquid from the pot and add to the soup. Keep heating and stir until soup thickens.

What to Serve With Healthy Mushroom Soup

Mushrooms have an affinity for these flavors:garlic, herbs, onion, pasta, rice, wine, miso, balsamic and olive oil.

I use some of these flavors in the soup, but you can also include in dishes to serve along with your bowl of healthy homemade mushroom soup.

Another idea is to stir in some pasta, brown rice or wild rice to a bowl of soup to make it more substantial, especially when the soup eating as a main course.

Here are some of my favorite healthy recipes that are vegetarian and vegan to serve along with a bowl of homemade soup.

Pair up your bowl of hot steaming vegan cream of mushroom soup with a delicious salad such as Citrus Avocado Salad with Pomegranate Vinaigrette or Mango Fruit Salad with Cilantro Lime Vinaigrette.

Soup and sandwich is one of my all time favorites. I suggest this Roasted Eggplant Sandwich with Olive Tapenade or keep it simple and layer up lettuce, tomato and avocado with a spread of hummus.

Start off your lunch with a bowl of the soup, followed by these Greek Hummus Stuffed Avocado Boats for the main dish.

Keep it simple with some homemade Rosemary Soy Crackers, Southern Style Pumpkin Biscuits, a slice of Vegan Cornbread or your favorite crusty bread.

Bake up a sweet potato or regular potato with your favorite toppings and serve it with a bowl of hot soup.

Tips for BEST Results

Choose fresh mushrooms that are free of spots, don’t feel slimy or sticky and have a fresh earthy smell.

Be sure to mix the cornstarch with the liquid before adding it to the soup. This prevents the cornstarch from clumping when it’s added to the soup.

Use fresh thyme when making healthy mushroom soup for the best flavor.You can even sprinkle some over the top instead of green onions for extra flavor.

Can I use dried mushrooms to make healthy mushroom soup?

While I prefer the texture of fresh mushrooms much better than dried mushrooms, they do add a more intense umami flavor.

If you plan to use dried mushrooms in place of the fresh, you may find that they soak up more liquid since they will rehydrate while cooking.I suggest having some additional mushroom broth on hand to add just in case you need it.

Also, when I use dried mushrooms, I prefer blending the soup into a smooth cream of mushroom soup which diminishes the texture of the rehydrated dried mushrooms, but delivers a rich and umami packed soup that tastes great.

Does a cream of mushroom soup need to be blended?

It doesn’t have to be blended, which is why I don’t blend it in this recipe. But there may be some cases where you prefer it to be completely smooth. Here’s how to make a blended creamy mushroom soup:

Once the soup is fully cooked, transfer it to a blender (very carefully) and blend it up.Return it to the pan and thicken it up more if you prefer using the same method of mixing in cornstarch with a portion of the hot soup from the pot.

Most often I blend this healthy mushroom soup when using it as a replacement for canned cream of mushroom soup in recipes. In this instance, I want a thicker, creamier and smoother soup similar to the texture of the canned soup.

Can I use this healthy mushroom soup as a replacement for canned mushroom soup?

If you are looking for a creamy soup recipe to use in recipes, this one will work with just a few modifications.As a note, you will need about 1 ⅓ cup of soup to replace a 10.5 ounce can of soup.

In order to use this recipe as a replacement, I recommend blending the soup with an immersion blender or regular blender after it’s cooked, but before adding the cornstarch.

Return the soup to the pot after blending.Remove about ½ cup of soup and whisk in the cornstarch until the mixture is smooth.Add the mixture back to the soup and cook until thickened.You can add more cornstarch if you want a thicker soup.

  • 1 tablespoon olive oil
  • ½ white onion, diced
  • 3 cloves fresh garlic, minced
  • 2 cups fresh mushrooms, sliced
  • 1 teaspoon fresh thyme
  • 3 cups mushroom broth
  • 1 tablespoon miso, red or white
  • ½ cup coconut milk
  • 3 tablespoons cornstarch

  • Heat oil in a soup pot over medium high heat.

  • When hot, add the onion and garlic and cook until onions start to soften about 1-2 minutes. Next, add the mushrooms and thyme, cooking an additional 3 minutes.

  • Add broth and miso to the pot, cover with lid, reduce heat and cook for 5 minutes.

  • Whisk together the cornstarch and milk until smooth. Add to the soup and continue cooking for five minutes.As it cooks, the soup will thicken. Taste and add salt and black pepper as needed.
