How to Make Eggnog Safely

In order to make this safe to drink, the mixture with the eggs needs to be cooked.

This process is done very gradually with heated milk so that you don’t scramble the eggs.

Most people prefer cooked eggnog as opposed to raw because it provides a richer flavor.

How to make eggnog:

First, whisk together the egg yolks and the sugar until this mixture is light and creamy.

Second, get out a saucepan and turn the stove to medium heat. Add the heavy cream, milk and cinnamon.

Then stir all of this together and heat until the mixture reaches a simmer.Don’t let it boil!

You will need to watch it closely and don’t walk away from the stove.

Now, gradually add the hot milk to the egg mixture. It is really important that you do this gradually so you don’t scramble the eggs.

I normally do a spoonful at a time and whisk after each spoonful is added.

Continue to follow this process until all the milk has been added to the egg mixture.

After all of the milk has been added, pour the mixture back into the saucepan on the stove.

Then heat on medium low heat and continue to whisk until the mixture is slightly thickened. Keep in mind that it will thicken some more as it cools.

Just remove from the heat and add the vanilla extract.Place the eggnog in the refrigerator until it has chilled and thickened.

This is optional but I like to serve it with homemade whipped cream and a sprinkle of cinnamon on top.

How to store:

Put the eggnog in an air tight container in the refrigerator for up to 1 week. This is such a time saver around the holidays and I love to make it in advance.

It saves time so you can do other things that need to be completed on the holiday or day of the party.

FAQs

What are the ingredients in eggnog? ›

A traditional holiday drink dating back hundreds of years, eggnog is made with eggs (hence the name), milk, cream, spices like nutmeg and vanilla, and fortified with rum, whisky, and/or brandy.

Why is my homemade eggnog so thick? ›

The distinct flavors of egg, cream, and liquor meld together even after just a day or two in the fridge, making a smoother, more balanced cup of nog. The proteins in the eggs also start to thicken, giving eggnog its signature spoon-coating thickness.

What is the best alcohol to put in eggnog? ›

Choose The Right Spirit

While brandy is the most traditional alcohol to pair with eggnog, according to traditional recipes, you can also use a mixture of dark rum and Cognac. If you like your eggnog with more of a kick you can also add bourbon, but we recommend sticking to rum and Cognac to preserve the 'nog's flavors.

How to make eggnog taste better? ›

Drizzle a little chocolate sauce into the shaker with the eggnog for a chocolate eggnog. Add a splash of vanilla or almond extract, or turn your eggnog into an iced eggnog latte by pouring a shot of espresso into the shaker. Either way, you'll feel the spirit of the holidays!

How long does homemade eggnog last? ›

A fresh batch of eggnog can mature for months, or even years. And some say that's a good thing.

What percentage of alcohol is in eggnog? ›

A concentration of at least 20% of alcohol (about the same amounts of alcoholic spirits and milk or cream), and refrigeration are recommended for safety.

Why can't you drink a lot of eggnog? ›

People with diabetes, lactose intolerances, or egg and dairy allergies, as well as those abstaining from alcohol would all find this drink to be problematic. For the rest of people who don't mind ice cream and whipped cream every so often, imbibing a glass or two can still raise a red flag to the digestive system.

What makes eggnog unhealthy? ›

Traditionally made with eggs, cream, milk, and sugar, no one would say that eggnog is a healthy drink. Even a small serving can pack significant amounts of calories, fat, saturated fat, and added sugars. And then there's the fact that homemade eggnog made with raw eggs can be a food-poisoning risk.

Why does aged eggnog taste better? ›

The idea? Make a batch of eggnog and let it age for at least three weeks in the refrigerator before drinking. The rest period supposedly drives off eggy taste while giving the other flavors a chance to meld. At the same time, the alcohol has a chance to kill any potential pathogens in the mix.

What do you call eggnog with alcohol? ›

Rumchata Eggnog is an alcoholic beverage made with eggnog and RumChata® served in a glass with a cinnamon-sugar rim. It's the perfect co*cktail to serve at your Christmas and New Year's Eve parties!

What type of rum is best for eggnog? ›

If you'd like to add rum to your mugful, opt for a golden or dark rum. These kinds of rum have more depth of flavor than white rum. You can also add spiced rum if you want to add a kick to your drink, but know that spiced rum may overwhelm the flavor of your homemade eggnog.

How to elevate egg nog? ›

If you prefer your 'nog a little more savory, try the Maple Bourbon Eggnog, which—if you absolutely must—you can garnish with crispy bacon bits. Swapping some of the milk with buttermilk adds an awesome tanginess to your eggnog which goes well with a bit of grated lemon zest for Lemon-Buttermilk Eggnog.

Why isn't my eggnog thickening? ›

To make it thicker, use less milk. 1 cup of whole milk will make a smooth eggnog, but if you know that you like a thicker eggnog, stir in only ½ cup of milk.

What is the main flavor in eggnog? ›

What does eggnog taste like? It's sweet, rich, and very creamy. Think of a glass of custard or melted vanilla ice cream! But it also has a slightly spiced flavor thanks to the cinnamon and nutmeg.

Is eggnog healthy? ›

Eggnog may not be considered a "health food," but the drink does have some nutritional benefits including certain vitamins and protein. Traditional eggnog is also high in sugar and fat, and for that reason, it's best to drink in moderation as a dessert.

What are the ingredients in favorite day eggnog? ›

Ingredients: milk, sugar, cream, skim milk, whey, egg yolks, guar gum, natural and artificial flavor, carrageenan, spices, salt, gelatin, annatto-turmeric color.

Why is eggnog a Christmas drink? ›

In the 1700s, rum from the Caribbean was the American eggnog alcohol of choice. But it was scarce during the revolution, so it was traded out for moonshine. This might explain why it became associated with the Christmas season. It warmed up drinkers in the cold weather, and true eggnog called for expensive liquor.

What makes eggnog different from milk? ›

At its core, eggnog is an emulsion of milk and/or cream, sugar, and, yes, eggs. Unlike in an egg cream—a similar old-timey drink that actually gets its name from the foamy, whipped egg white-like texture achieved by mixing seltzer and dairy fat—the “egg” in eggnog is very, very real.
